
The Menes 600 is a dough belt line that satisfies all demands for the making of premium breads and bread rolls. With a working width of 600 mm, the dough sheet processing system (TEM) and a rounding unit for rolls with a capacity of 33 strokes /min, the line guarantees a great variety of products with outstanding product quality and a capacity of up to 2,000 kg of dough per hour.
Due to the modular design, the Menes can be tailored to the individual needs of each customer; it can be upgraded at any time later. Tried-and-tested Koenig components such as seeding unit, forming stations, cutting stations and retracting units are part of this modular system.
The dough string processing system (TEM) for all sorts of dough produces a uniform homogeneous dough strip from the gently separated dough blocks. This guarantees weight-accurate products and minimum dough waste right from the start.
The Twin Sat 600 guarantees a continuous gentle processing of the dough. The satellites rotate with almost the same peripheral speed in opposite direction to the planets. The speed of planets and satellites can be adjusted and tuned optimally to dough consistency and production speed. With the Twin Sat, the dough is not rolled but pressed very gently at a high speed to the desired dough belt thickness by means of knocking movements – very similar to an artisanal approach. The result is an almost unstressed dough that can be cut, formed and processed without further rest.
IGV – the renowned Institute for Grain Processing (Institut für Getreideverarbeitung) – has done a survey that showed that the TwinSat technology has a considerable influence on the rheological qualities of the dough and thus on the product to be produced.

The Koenig cross-roller unit is the high-end solution for adjusting the dough sheet width. The dough sheet is enlarged by means of a combination consisting of an upper smooth roller and a shaft installed underneath the transfer belt. The bottom shaft is built with eccentrics that are arranged in a spiral form. The pulsating movement thus created drives the dough gently from the centre outwards. The arrangement of the eccentrics also allows the dough to have a short rest during the entire processing process.
When it comes to cutting and stamping, the Menes guillotine stands out with a whole range of major advantages: It stands for great cutting forces and runs very softly due to the servomotor. A quick exchange device ensures that the stamping and cutting tools can be exchanged in a matter of minutes; owing to the cutting speed, the cut is exactly vertical even with products with substantial dough sheet thickness. With this sophisticated technology, incredibly high stroke numbers can be run, so there is never a bottleneck at the knife.
This round-moulding device is an advancement of the tried-and-tested Koenig cup rounding unit; it can be run with up to 33 strokes per minute. With a 5-row operation, this corresponds to an hourly capacity of 9,900 pieces. With optional greasing, it also produces outstanding German“Rosenbrötchen.”
